For years I have ripped out recipes from every magazine, marked endless cookbook pages, and printed numerous websites, searching for the best tips on how to make Cioppino, a classic Italian seafood stew dish. This weekend I finally got around to making it…and it was so worth the wait! Three different fishes make it light enough for seconds while hearty vegetables and tomato broth makes it a filling dish. This recipe is mainly adapted from Ellie Krieger’s So Easy cookbook with a few Foodetarian twists. Check out this quick weeknight recipe for Cioppino.

vegetarian shepherd’s pie

One of our 2016 goals is to incorporate more meatless Monday’s into our weeknight dinners. We’re big on chicken and fish in our house but my oldest son loves his veggies, so why not use that to my advantage?! Here’s a vegetarian take on Shepherd’s Pie that won’t leave you missing the meat! Hearty mushrooms and lentils are filling, while garlicky mashed potatoes give the feel of traditional Shepherd’s Pie with bold, layer flavors. Here’s my meatless Monday Vegetarian Shepherd’s Pie.

toasted artichoke garlic bread

We are all garlic lovers in my house, including my 19 month old son who was probably bombarded with it while I was still pregnant with him! He’s a great eater and this recipe happened to be the first time he tried artichokes (which he loved!). It combines salty parmesan and sweet and tangy artichokes with sharp garlic flavor all on warm toasted bread. It’s like all your favorite things about artichoke dip served on easy to eat bread! I was inspired by a friend who says she makes a similar recipe for her family who loves it as well. Here’s my Toasted Artichoke Garlic Bread.

devilishly good meatless monday eggs in purgatory

This is a devilishly fun dish to start October’s meatless Monday’s off right! Believed to be of Tunisian decent, Shakshouka, or Eggs in Purgatory, traditionally uses Harissa, a paste made from peppers and spices, but mine utilizes smoky cumin and jarred roasted red peppers which are probably sitting in your pantry right now! Serve family style or in individual dishes for a simple weeknight dinner!

meatless monday layered squash enchilada verde

Meatless Monday meets seasonal butternut squash. Hooked yet? This dinner was inspired by Real Simple’s October issue. Spicy jalapeños, smooth sour cream, and sweet squash with salsa verde provide a hearty dish good for the heart! I used less salsa and added more cheese (because everything is better with more cheese!) than the original recipe and it totally worked, ask my husband and his huge second plate!
